"Pouding chômeur" - Camping Version

Why this adaptation?

Traditional unemployment pudding (pouding chômeur) requires an oven . This simplified version uses a single pot and can be cooked on a camping stove, campfire, or BBQ with a lid.

Ingredients (4-6 servings)

For the batter:

  • 1 cup all-purpose flour
  • ½ cup white sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup reconstituted powdered milk
  • 2 tbsp melted butter OR oil
  • 1 egg (or powdered egg substitute)
  • ½ tsp vanilla extract (optional)

For the simplified syrup:

  • 1 cup brown sugar, packed
  • 1¼ cups water
  • 2 tbsp butter
  • 1 pinch salt

Minimal equipment required

  • 1 heavy pot with tight-fitting lid (cast iron or thick aluminum)
  • 1 mixing bowl
  • 1 wooden spoon
  • Controllable heat source (stove, coals, BBQ)

Camping cooking method

Step 1: Prepare the syrup

  1. In the pot, mix brown sugar, water, butter, and salt
  2. Bring to a boil over medium-high heat
  3. Let boil 2-3 minutes until completely dissolved
  4. Remove from heat and let cool slightly

Step 2: Prepare the batter

  1. In a bowl, mix all dry ingredients
  2. Add liquid ingredients and mix until smooth
  3. Batter should be thick but pourable

Step 3: Assembly and cooking

  1. Return the pot with syrup to LOW heat
  2. Using a spoon, drop batter over the hot syrup (do not stir!)
  3. Cover tightly and cook 25-30 minutes on very low heat
  4. Do not lift the lid during cooking!
  5. Test doneness by inserting a toothpick into the batter

Camping-specific adaptations

Practical substitutions:

  • Fresh milk → Powdered milk + water OR diluted evaporated milk
  • Fresh egg → Egg powder OR applesauce (¼ cup)
  • Butter → Vegetable oil or margarine
  • Liquid vanilla → Vanilla powder extract

Variations by availability:

  • Maple version: Replace ½ cup brown sugar with maple syrup (the best version)
  • Fruit version: Add dried or canned fruit to syrup
  • Chocolate version: Add 2 tbsp cocoa powder to batter

Fire management:

  • Campfire: Use coals, not direct flames
  • Camp stove: Minimum setting after syrup boils
  • BBQ: Indirect cooking, burner on minimum

Success tips

The secret: Slow, gentle cooking - steam makes the batter rise
✅ Patience: Don't open the lid before 25 minutes minimum
Doneness test: Top should be firm to touch
Serving: Let rest 10 minutes before serving
Storage: Eat warm or cold, keeps for 2 days (if you can resist)

Serving and nutrition

  • 4-6 generous servings
  • Total time: 45 minutes (15 min prep + 30 min cooking)
  • Energy: Rich dessert, perfect after an active day outdoors

Ultra-light variant (backpacking)

For ultralight camping, prepare only dry ingredients at home in separate bags:

Bag 1 (batter): Flour + sugar + baking powder + salt + powdered milk Bag 2 (syrup): Brown sugar + salt

In the field: Add water, oil, and egg powder, then follow normal method.

This recipe respects the spirit of traditional unemployment pudding while adapting to camping constraints. Enjoy in the great outdoors!
